Chatchapuri / Chatschapuri


This lady made chatchapuri for her guests (summer 05). Chatchapuri is to Georgiens what pizza and spaghetti are for Italiens - THE national dish. It consists of dough and a special, rather salty cheese inside. Finally, it is usually covered with some melted butter.
Altough this type - called Imeruli - could be regarded as standard, there are a number of variations: Adjaruli, Megreuli and Penovani. Adjaruli, from the region Adjara at the black sea shore, has the form of an "open" ship (meaning you see the cheese) and comes with an egg and a spoon of butter on top. The megreuli type has a different crust on top than the Imeruli while the penovani type is made with puff pastry.
Its difficult to find a substitute for georgian cheese. Some people abroad take a mixture of mozzarella and sheep-cheese, but it will never taste the same. So go to Georgia to find out how delicious all types of chatchapuri are!

Diese Dame machte Chatschapuri für ihre Gäste (Sommer 05). Chatschapuri ist für Georgier, was Pizza und Spaghetti für Italiener bedeutet. Er wird aus Teig und einem besonderen, recht salzig schmeckenden Käse zubereitet. Schließlich wird er mit Butter bestrichen.
Obwohl diese Art - die Imeruli genannt wird - als Standard bezeichnet werden kann, gibt es mehrere Variationen: Adjaruli, Megreuli und Penowani. Adjaruli, aus der Region Adjara am Schwarzen Meer, hat die Form eines "offenen" Schiffes, in dem man ein Ei auf dem Käse schwimmen sieht. Ein Löffel Butter darf nicht fehlen. Die megrelische Variante hat eine andere Oberfläche als der Imeruli, während Penowani mit Blätterteig hergestellt wird.
Es ist schwierig, außerhalb Georgiens einen Ersatz für den georgischen Käse zu finden. Mozzarella und Schafskäse gemischt kommen dem Geschmack am nächsten, schmecken aber lange nicht so gut. Also, auf nach Georgien!
